Sadly, I didn’t have the best tomato crop this year. The tomatoes looked good but they didn’t have that home grown amazing taste and they were a tad on the mushy side. I was disappointed because I love fresh salsa and fresh thin sliced tomatoes on my sandwiches.

Making granita has been on my to-do list for the longest time. One of the biggest problems is deciding which flavor to make. After much thought, I decided on coconut granita and added some blueberries for a pop of color and flavor.

My beet obsession continues. If you follow along, you may recall, I posted a round up of beet inspiration and then made some yummy and healthy Beet & Apple Salsa. But did you know that originally it was the beet greens that were eaten not the beet root – makes sense I think.

Beets seem to be all the rage lately and since I had never cooked with beets before, I decided to give it a try. It’s hard to resist that beautiful deep red color and I love trying out new dishes that are interesting both visually and to the taste buds.

Happy Friday and weekend everyone. What do you have planned for the weekend? I hope something fun, maybe some relaxation time and of course a little creativity. I’ve been so inspired by all the beautiful beet recipes I’ve been seeing lately. I’m thinking about picking up some beets and experimenting this weekend. Be on the lookout for something beet-related from me. In the meantime, be inspired by these gorgeous beet recipes.
Enjoy and I’ll see you back here on Monday!

I’m sure you’ve seen all of those beautiful “naked” cakes that are being pinned lately. They’re all the rage and so pretty overflowing with layers of frosting, berries and flowers. I decided to try to make one and although I wouldn’t categorize it as a complete fail it definitely falls short of the inspiration images I’ve been eyeing.

Happy Friday everyone. For many of us this Sunday is Easter. I thought I’d leave you with some Weekend Inspiration to make good use of those Easter leftovers you might have. If you’re not celebrating Easter, these are still some great recipes to check out.

Compound butter seems to be very popular right now. I’ve been seeing gorgeous blends in magazines and online. Compound butter is a mixture of butter and, well, anything you choose. Common blends are herbs, chives, honey and the version I made, brown sugar & cinnamon.

Friends, the big game is coming up and if you’re like me, it’s all about the food and snacks. Well, a little about the game but the food is a big part of it. I’ve rounded up some of my very own recipes that I’ve shared here in the past years that make great game day eats. There’s sandwiches, snacks, healthy options, desserts and even a little treat for your four-legged friends. Enjoy the game – enjoy the food – enjoy the fun.
First up is Classic Game Day Eats – a variety of sandwiches to please everyone.

Friends, I have a new breakfast obsession! And it’s so fast and easy. I’ve discovered that you can microwave an egg white and it’s perfection. Add in some fresh veggies and you have a healthy breakfast sandwich in 30 seconds.

I’ve been making Sloppy Joes like this since my son was little. I think it happened by accident when I was going to make Sloppy Joes but didn’t have any rolls or hamburger buns – but I did have some hot dog buns. That’s the night the Sloppy Dog was born in my house.

I was so excited to see these little purple potatoes at my regular market. It’s always fun to try new things. And these little guys exceeded my expectation with their incredible burst of color.

You know those instant ramen noodles – the ones that come in a compact rectangle with a little powdery season pack? Ya, those. I always keep packages of those in my cupboard. If I do make them with the season pack, I only use about 1/3 of the packet. But I rarely use the seasoning that it comes with. Instead, they’re a great base for leftovers. Beef, pork, chicken, shrimp… just about anything goes with those noodles. Here’s an example of what you can make.
