Etceteras: recipe organization

Organizing: Covered Recipe Binder via homework | www.carolynshomework.comWith the new year always comes a wave of cleaning, purging and organizing. I’m not sure what it is that brings that out in some of us but I’m going to ride that wave for as long as I can. I haven’t had time to tackle some of the larger organizing projects, like cleaning out my closet {sigh… I’ll need a full weekend to tackle that mess} but I did get one little project done and I’m thrilled with the end result.

For big games we usually have a potluck and it’s so fun to sample everyone’s dishes and snacks – oh, and watch the game. At our house it wouldn’t be a football gathering with Pigs In a Blanket. Have you had those? It started when the gatherings included young kids. I’d always make a large platter of Pigs In A Blanket and notice that it wasn’t just the kids gobbling them down.

Baked and mashed potatoes are quick and easy side dishes that seem to go with everything. These Potatoes Au Gratin are another family favorite and they always make an appearance at our Easter brunch. This year, I baked up these Potatoes Au Gratin in individual bowls.

Good Taste: spinach, apple & glazed pecan salad

I mentioned my elderly neighbor in my tomato post here. I honestly didn’t think he would be gardening this year but happily, he’s been bringing me bags and bags of fresh spinach. I froze a good portion of the spinach and will use it down the road for spinach dip, spinach quiche, or maybe even creamed spinach.

In the meantime, the spinach is so fresh and the weather is so nice, I had to make a spinach salad. The recipe I use is from and the glazed pecans really make the salad.

Blog Spinach Salad collageTo glaze pecans, you simply cook them with sugar in a non-stick frying pan. Easy and yummy!

I used granny smith apples cut into very thin slices but any type of apple will do.

The original recipe calls for red onions but I used what I had – regular brown onions sliced very thin.

Good Taste: toffee bar thank you gift

I needed to make a thank you gift for a friend recently. I dug through my recipes and found my recipe for graham cracker toffee bars. You can find the recipe here via The Pioneer Woman’s Tasty Kitchen site.

I don’t make these bars very often. Not that they are difficult to make – in fact, they’re super easy. The reason I don’t make these very often is that they are extremely dangerous. Addicting, 10-step program, can’t stop eating these good.

But since I would be giving away “most” of the bars, I went ahead and made a batch. Here’s proof – the bars getting wrapped up to be given away.

I wrapped the bars in plastic and then covered them in pink tissue paper and added baker’s twine and a pretty card.

I’ll be delivering the goodies tomorrow.

And eating a few leftover bars tonight.

Good Taste: shrimp salsa

I haven’t posted a recipe in awhile. It’s not that I don’t cook or bake. I do…a lot!

It’s just that we usually eat the food before I can take any pictures. But I remembered to take pictures when I made this shrimp salsa for the Fourth of July. It’s easy to make and a great summer party dish.

I don’t have exact amounts for the ingredients but this is approximately what I used. And if you grow your own tomatoes or know somebody who will share their harvest, well, everything just tastes so much better.

6 tomatoes
1 cup shrimp
½ onion
1 carrot
2 Tbsp cilantro
1 garlic clove

Chop up the above ingredients into small pieces.

1 Tbsp lemon juice
A pinch of cayenne pepper or splash of hot sauce
Salt and pepper to taste
