GOOD TASTE: Easy Coconut Blueberry Granita

Coconut Blueberry Granita (homework - carolynshomework (4)Making granita has been on my to-do list for the longest time. One of the biggest problems is deciding which flavor to make. After much thought, I decided on coconut granita and added some blueberries for a pop of color and flavor.

Here’s all you need to do:
  • Using an 8” x 8” baking pan, start by putting the pan in the freezer to chill.
  • Make a simple syrup by combining 1/2 cup sugar and 1/2 cup water in a saucepan. Cook over low heat until the sugar is dissolved and the mixture is gently boiling. Remove the pan from the heat and let cool.
  • Pour a can of coconut milk (13.5 ounce) into the chilled pan. I used a coconut drink (Coconut Dream) which is a coconut milk mixture.
  • Add the cooled simple syrup and stir well. Add the blueberries.
  • Place in the freezer and using a fork or spatula break up the ice crystals every 30 minutes until it is a pan of  frozen crystals. The process should take about 2 hours.
  • To serve scoop into small bowls. The granita is perfect after it has been sitting at room temperature for a few minutes.
