For the brownie cups, all you need is your favorite brownie recipe or a brownie mix. I used a brownie mix because it’s so fast and easy. Mix up your brownie batter, grease your muffin tin and fill each muffin cup about 2/3 full. I made the mistake of filling each cup only halfway full and you can see how low my cups are. Bake the brownies for about 1/2 of the time you would bake them in a pan. Check your brownies and when they are not quite done, take them out and press the centers with a cup or small round object. I used a spice jar. Once all the centers are pressed down put them back in the oven and bake for 5 more minutes. Let the brownies cool and remove your cups.
Pre-scoop several balls of vanilla ice cream and leave in the freezer until you are ready to assemble and serve.
Once you’re ready for dessert, start assembling. Place a scoop of ice cream in the brownie cup and add sliced strawberries around the edge. Drop a handful of blueberries on top and you’re ready to dig in.
I was snapping pictures as fast as I could but inevitably the ice cream starting melting. Oh well, it was a hot day and it looks just as yummy with the cream melting through.
What’s a blogger to do once the ice cream completely melts? Dig in of course. Yup, it was delicious.
