I don’t really decorate for St. Patrick’s Day but it’s always fun to make a themed dessert or treat.
I decided to make a mock whoopie pie using store bought Vanilla Wafers. It doesn’t get easier than that. Of course, if you’re ambitious you can make your own cookies or whoopie pie cakes. The filling is leftover frosting from a birthday cake I made last week. You’ll want to fill your cookies generously and then push down on the top so that the frosting just starts to overflow a little.
Chop up those heavenly mint chips.
Doesn’t it look like I was in the kitchen baking for hours? Okay, maybe not, but not bad for clearance mint chips, leftover frosting and vanilla wafers.
