GOOD TASTE: Vanilla Wafer St. Patrick’s Day {Leprechaun} Treats

Vanilla Wafer St. Patrick's Day Cookies, Whoopie Pies, Leprechaun TreatsHigh fives for me! For once I’m ahead of the holiday curve. We’re about a month away from St. Patrick’s Day and I have a fun Leprechaun Treat to show you today.





Vanilla Wafer St. Patrick's Day Cookies, Mint Chocolate, Whoopie PiesI don’t really decorate for St. Patrick’s Day but it’s always fun to make a themed dessert or treat.


Vanilla Wafer St. Patrick's Day Cookies via homework (2)The inspiration for this Leprechaun Treat came from this clearance bag of Winter Chocolate Chips. It’s a combo bag with chocolate and mint chips and the market had it reduced for clearance. It was simple enough to separate out the chocolate and mint chips and I’ll save the chocolate ones for another recipe.


Vanilla Wafer St. Patrick's Day Cookies via homework (3)I decided to make a mock whoopie pie using store bought Vanilla Wafers. It doesn’t get easier than that. Of course, if you’re ambitious you can make your own cookies or whoopie pie cakes. The filling is leftover frosting from a birthday cake I made last week. You’ll want to fill your cookies generously and then push down on the top so that the frosting just starts to overflow a little.

Vanilla Wafer St. Patrick's Day Cookies via homework (7)Then roll the cookie edges in the chips. You can put them in the refrigerator so everything sets into place. When you’re ready to serve them bring them to room temperature again. Whoopie!
