I combined a few of my favorite flavors and things I was craving and came up with this simple dessert idea. Chocolate wafer crust, vanilla ice cream and berries.
The sugared berries and lemon peel garnish are what give this easy dessert a fancy and summery look. Here’s a tip: if you don’t have a special lemon rind peeler, use a regular vegetable peeler and simply cut your lemon peel to the desired length and width with scissors. Roll the peel around a straw for a pretty spiral. Easy!
Chocolate Cookie Crust Mini Ice Cream Tart
I've combined a bunch of my favorite flavors into this individual serving ice cream tart. A chocolate cookie crust, vanilla ice cream and blackberries.
Ingredients
- 20 Chocolate Wafers
- 3 Tablespoons Butter
- Blackberries
- 1-2 Egg Whites
- 1 Tablespoon Sugar
- 2 cups Vanilla Ice Cream
Instructions
Prepare the crust by crumbling the cookies in a food processor. Add the 3 Tbsp. melted butter and pulse for a few seconds longer. You can use chocolate wafers or oreos with the cream filling removed. Fill the bottoms of a muffin tin or small ramekins with the crumbled cookie dough. Press the bottoms and sides to form a small tart. Bake at 350 for about 10-15 minutes. Let cool. Once the crusts are cool, fill them with your favorite vanilla ice cream. Place back in the freezer. To make the sugared berries, roll the berries in egg white and then in sugar. Let dry. Add the sugared berries and lemon peel garnish right before serving.
