Are you as excited about the tastes of Thanksgiving as I am? In anticipation, I’m trying out some new recipes and I thought this cranberry relish, cream cheese & turkey crostini would be a perfect Thanksgiving appetizer or even a Thanksgiving leftovers idea.

It has all the flavors of a Thanksgiving meal – well, except the gravy and pumpkin pie – but almost all the flavors. The toasted baguette replaces the stuffing, diced turkey is mixed with cream cheese and topped with cranberry sauce. The combination is a wonderful mixture of sweet, tart and salty plus crunchy and creamy. Fantastic!

The best part about this appetizer is it is quick and easy. Start with a French Baguette and cut into 1/4 inch slices. Brush olive oil on each slice and bake at 300 degrees for about 10 minutes or until golden brown.

While your bread is baking, mix about a 1/2 cup of cream cheese with diced turkey. I used lunch meat turkey but how yummy will this be with leftover turkey from Thanksgiving!

Once your bread is out of the oven, spread the cream cheese mixture on each slice. Then add a dollop of cranberry sauce.

I used Pacific Organic Jellied Cranberry Sauce. Pacific Foods uses Tetra Pak® cartons which are made out of 70% paper from selectively harvested, re-grown trees that are FSC-certified (Forest Stewardship Council). I love them – they’re stackable and take up less space and they preserve the flavor of the food.

They’re easy to open and re-closable so you can save what you don’t use.

With all the holiday cooking and baking that I’m planning to do, I’m happy to be using these smart packages that are recyclable.
