GOOD TASTE: Peanut Butter Cookie Cups with Salted Caramel Ice Cream

Like days when I get to to come up with a recipe using ice cream that was sent to me. Not just any old ice cream but Graeter’s ice cream. It’s my absolute favorite brand of ice cream. Graeter’s still makes their ice cream in a French Pot two gallons at a time and it’s rich and creamy and oh-so good.

Peanut Butter Cookie Tart with Salted Caramel Ice Cream via homework | carolynshomework.comBut for this delicious treat that I concocted, I used their Salted Caramel flavor. Here’s how Graeter’s describes their Salted Caramel ice cream and I couldn’t agree more.

“Hurry up!” is never to be uttered in the presence of our brown sugar, as it slowly simmers into the known universe’s most delectable, dashed-with-salt caramel. For best results, savor unhurriedly, and often.

You could even skip the bowl if necessary! But I thought since it’s the holidays why not go crazy and make some little cookie tart bowls to hold the ice cream. I actually used a Peanut Butter cookie mix which made these super easy.

I baked them according to the package directions and once they were cooled, added dollops of the wonderful ice cream.

By the way, how great are these vintage scoops shown on the Graeter's site as part of their history. They’ve been making ice cream since 1870!

  3. Oh wow! What a great idea! I'm thinking I should probably make these soon! :) We sometimes make cookies and then just crumble them up into a bowl of ice cream, but this is an even better idea! Pinning this for later!
