GOOD TASTE: 30 Second Egg White, Mushroom & Spinach English Muffin

Egg White Mushroom Spinach English Muffin - homework (8) Friends, I have a new breakfast obsession! And it’s so fast and easy. I’ve discovered that you can microwave an egg white and it’s perfection. Add in some fresh veggies and you have a healthy breakfast sandwich in 30 seconds.




Egg White Mushroom Spinach English Muffin - homework (9)Unlike the breakfast sandwiches at fast food places or in the frozen section of the grocery store, these are made with all fresh ingredients.


Egg White Mushroom Spinach English Muffin - homework (2)All you need are a few veggies. Use up leftovers from yesterday’s salad or whatever you have on hand. No vegetables on hand – chop up some turkey or whatever you prefer to add to your egg. I started with some fresh spinach leaves and a few mushrooms.


Egg White Mushroom Spinach English Muffin - homework (3)Chop up your spinach and mushrooms. Crack an egg and separate the egg white from the yolk or you can make this with the entire egg if you prefer. Put your egg white into a small dish about the size of your English Muffin.


Egg White Mushroom Spinach English Muffin - homework (4)Add a little salt and pepper and then your chopped vegetables. Microwave on high for 30 seconds.

Place your egg onto a toasted English Muffin, Mmmm, I’m getting hungry just looking at it.
