Unlike the breakfast sandwiches at fast food places or in the frozen section of the grocery store, these are made with all fresh ingredients.
All you need are a few veggies. Use up leftovers from yesterday’s salad or whatever you have on hand. No vegetables on hand – chop up some turkey or whatever you prefer to add to your egg. I started with some fresh spinach leaves and a few mushrooms.
Chop up your spinach and mushrooms. Crack an egg and separate the egg white from the yolk or you can make this with the entire egg if you prefer. Put your egg white into a small dish about the size of your English Muffin.
Add a little salt and pepper and then your chopped vegetables. Microwave on high for 30 seconds.
There’s no need to grease your dish the egg just lifts off with a fork.
Place your egg onto a toasted English Muffin, Mmmm, I’m getting hungry just looking at it.
If you like cheese, add a piece – I used freshly sliced Smoked Gouda.
Running out of time? Wrap it up and take it with you.
Thanks so much for stopping by.
