For big games we usually have a potluck and it’s so fun to sample everyone’s dishes and snacks – oh, and watch the game. At our house it wouldn’t be a football gathering with Pigs In a Blanket. Have you had those? It started when the gatherings included young kids. I’d always make a large platter of Pigs In A Blanket and notice that it wasn’t just the kids gobbling them down.


If you’ve never had Pigs In A Blanket you must try them. I make them with Hillshire Farm® Lit’l Smokies Cocktail Links wrapped in ready-to-bake crescent rolls and then baked until golden brown.

I thought a spin on the classic Pigs In A Blanket would be fun. So keeping the same basic idea, I came up with Chicken Hardwood Smoked Sausage Biscuit Bites with Apricot Jelly.

Chicken Hardwood Smoked Sausage Biscuit Bites via homework | carolynshomework.comHere’s how you make these tasty treats. You’ll need a package of Hillshire Farm® Chicken Hardwood Smoked Sausage. I purchased mine at Safeway which is Vons in my area. A can of ready to make biscuits or you can raise the bar and make homemade biscuits, and apricot jelly.

Chicken Hardwood Smoked Sausage Biscuit Bites via homework | carolynshomework.comStart by slicing your sausage on the diagonal and browning them in a pan. Place the browed sausage on a plate lined with a paper towel and blot the tops with another paper towel. Cook your biscuits.

Chicken Hardwood Smoked Sausage Biscuit Bites via homework | carolynshomework.comI sliced each biscuit in half since a slice of the sausage fit perfectly on a half of a biscuit. Drizzle the apricot jelly on top of the sausage and add the top half of the biscuit. That’s it.

I wasn’t sure what to expect. I thought long and hard about the different flavors. I knew the Chicken Hardwood Smoked Sausage would be wonderful with a biscuit but was the apricot jelly the right choice? Uh, yes. Yum, yum, yum!

The best part – they have 60% less fat than regular smoked sausage. I can’t wait for the next big game to surprise my friends with my new creation.
