Around this time of year it becomes sweet treat overload at our house. Between the Halloween haul, fall pies and desserts and holiday cookie baking it quickly becomes a sugar snack high all day long.

To try to minimize the sugar snacks, I try to mix things up a little and this is snack from my childhood that brings back happy kitchen memories. My mom used to make these with leftover rice. This was before we had a microwave so rice wasn’t saved and reheated. Instead, she would make these simple, yummy rice balls and wrap them in wax paper for snacking.

I thought the black and white themed rice balls would be fun for the Halloween season. They’d be a nice option for a Halloween buffet or gathering.

For these rice balls, I used some fun black and white polka dot cupcake holders and lined them with strips of seaweed (nori). I rolled the rice into balls using the method on my recipe card above. A light sprinkling of black sesame seeds tops off the black and white color scheme and adds a tiny bit of crunch and flavor.

To make them even more kid friendly, add pops of orange with strips of carrots. Enjoy!
