
Crockpot recipes are popular for a good reason. We are all so busy, it’s hard to pull together dinner and eat at a reasonable hour. But with a little planning, you can have a delicious meal when you’re done with work.

This is a basic shredded beef crock pot recipe that I’ve adapted so that we can get two meals out of it. I usually make this beef and use it for burritos or tacos. I save half of the meat and make BBQ Beef Sandwiches on another night. That’s my motto – cook once, eat twice!

The pickles on the plate are homemade too. My mom makes them and I’ve made them once before. You can find the recipe for “Dad’s Pickles”

And here’s the super easy recipe for this shredded beef. The original recipes was given to me by a friend. I adapted it slightly. Either way, throw it in in the morning and you’ll have pull apart beef by early evening.

This recipe is lifesaver because you can do so many things with the beef. If you don’t want to shred it, slice it and serve with potatoes. Use the broth to make a gravy. Oh my!
