I’ve been trying to be healthier and snack on things like veggies, fruit and granola. It irks me every time I buy granola at the market because it’s so darn expensive. And I don’t even get the really good stuff – that’s just too pricey. I finally had some time and made up a batch and it is so good.
The best part about homemade granola is you can custom make it. I decided to go with pistachio nuts and pomegranate seeds.
When pomegranates are in season, I buy extra and freeze the seeds. That way I can have fresh pomegranate year round.
The granola was super easy to make. The recipe called for thick cut oats, so I bought some special thick rough cut oatmeal.
I also bought a small amount of pistachio nuts but you can substitute any kind of nut. The pistachios were treat but I also like almonds, cashews and peanuts. I chopped my nuts so slightly so each bite would have a little less nut and the pretty green shows up better when they’re chopped.

I was surprised at how good it was. Much fresher tasting and flavorful than any store bought granola that I’ve had.
The only thing I would differently next time is to make double the amount. My husband, who usually doesn’t like this type of thing couldn’t stop eating it. I had to distract him with the leftover pistachio nuts or he would have eaten the whole batch.
