In fact, kale is one of the healthiest vegetables you can eat. Low in calories, high in fiber and one serving provides a day’s worth of vitamin C and more than a day’s worth of vitamin A and K. I’m planning on using it a lot in my current recipes, throwing in a few leaves here and there.
Toward the end of the week, I still had a bunch of Kale left and didn’t want it to go to waste. I Googled Kale recipes and found this super easy Kale Chip recipe from Martha Stewart and gave it a try.
To make these chips, you’ll need:
- Kale
- 2 tablespoons olive oil
- 5 teaspoons Sriracha sauce or any chile sauce
- Coarse salt
Add your chili sauce to the olive oil and mix well. Tear your kale into small 2-3 inch pieces. Use only the tender leaves and not the stems.
Mix your pieces of Kale in the olive oil mixtures and spread out on a baking pan.
Sprinkle with coarse salt and bake at 300 degrees for 30-40 minutes. Keep checking the kale chips while baking and turn them once or twice. Remove from oven when the chips are crisp. Cool on paper towel to absorb the extra oil.
These are so good. The 5 teaspoons of Sriracha was a little hot for me. I’m planning on reducing it to 2-3 teaspoons next time. Or I may try another flavor like lemon and salt. Either way, this a great way to use up your greens and still get some healthy vitamins while snacking.
