Be My Guest: Will Cook for Smiles

I’m still on a little break but have such a treat for you today. Lyuba from Will Cook For Smiles has been a regular contributor to The Inspiration Board creative party for quite awhile. Her dishes and goodies are always amazing so I’m thrilled that she’s here today to share with you.

Hello to all of you, lovely readers of Carolyn's Homework! I'm Lyuba From Will Cook For Smiles! I'm happy to be here, giving Carolyn a little summer break! While I got your attention, I might as well share an awesome recipe with you.

Today, I'm sharing an amazing cookie recipe that I've been making for years. I love these cookies so much because they are not just chewy but also crispy! How, you ask? They are nicely chewy in the middle but sweet and crispy on the outside.

I found this recipe years ago on another blog (The Cooking Chemist, I believe) and after making a few changes, I found my magic combination for our liking. If you like coconut or feeling like you are in paradise while biting into a cookie, these are definitely THE cookies for you! It is so incredibly easy to make these cookies and everyone loves them.

Chewy-Key-Lime-Coconut-Cookies 2 Chewy-Key-Lime-Coconut-Cookies Collage
2-1/4 cups unbleached, all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1 cup shredded coconut
1/2 tsp. table salt
1 cup sugar
3 oz. cream cheese, room temperature, cut into small pieces
Zest of 1 key lime
1/2 cup butter, melted and still warm
1 large egg, room temperature
1 Tbsp. whole milk
1 Tbsp. of key lime juice
1/2 cup of powder sugar for rolling cookies
1. Preheat the oven to 350 and line the cookie sheet with parchment paper.
2. Place sugar, cream cheese, and lime zest in a large bowl.
3. Pour warm butter over sugar and cream cheese and whisk until all combined.
4. Add egg, milk, and lime juice, whisk well.
5. Add flour, baking soda, baking powder and coconut. Mix with rubber spatula until completely combined.
6. Form 1-inch balls and lightly coat them in powder sugar.
7. Place the cookies on the baking sheet about 2 inches apart.
8. Bake for 11 to 12 minutes.

  2. I am a cookie aficionado, and these are some of the best I've ever made or tasted! I made them for fine arts night at my daughter's school and they were the first to go. The dough seemed very soft so I was worried that it would spread too much, so I did chill it for at least half an hour. I'll be making these all summer long. I also wasn't sure how much the recipe would yield, I think I got more than 3 dozen out of the batch.
